Receipe of Shahi Baingan (Royal eggplant)

Here is the receipe of Shahi Baingan.

Royal Eggplant Ingredients:

  • 500 gm of small size brinjals (egg plant)
  • Onions – 2 to 3 (very finely chopped)
  • Tomatoes – 3 to 4 (grated)
  • Fennel seeds (saunf) – 2 teaspoon
  • Red chilli powder – 1 teaspoon
  • Turmeric powder – 1/2 teaspoon
  • Coriander powder – 1 teaspoon
  • Salt – as per taste
  • Dry ginger powder – 1/2 teaspoon
  • Tamarind pulp – 2 and a 1/2 teaspoon
  • Frying oil – 2 teaspoon
  • Water – as per the consistency of the gravy.

How to make Royal Eggplant:

  • Wash the brinjals and cut them into four parts but don’t cut the top.
  • Now take two teaspoon of oil in the pan
  • Add brinjal into it and fry them till they become golden brown and tender.
  • Take out the brinjals separately on a tissue paper to soak the extra oil.
  • In remaining oil put 2 teaspoon of fennel(saunf) seeds.
  • After seeds splatter add onions into it.
  • Now add 1 teaspoon of coriander powder
  • 1/2 teaspoon of turmeric powder.
  • 1/2 teaspoon of dry ginger powder.
  • 1 teaspoon of red chilli powder.
  • Salt as per taste.
  • Now add tomato puree made by grated tomatoes.
  • Cook till the oil separates and add little water to the gravy.
  • Cook a bit and add fried brinjals and mix it with light hand.
  • Finally add tamarind pulp.
  • Cook it till the gravy thickens.
  • Shahi baingan is ready to serve.
