Here is the receipe of Shahi Baingan.
Royal Eggplant Ingredients:
- 500 gm of small size brinjals (egg plant)
- Onions – 2 to 3 (very finely chopped)
- Tomatoes – 3 to 4 (grated)
- Fennel seeds (saunf) – 2 teaspoon
- Red chilli powder – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Coriander powder – 1 teaspoon
- Salt – as per taste
- Dry ginger powder – 1/2 teaspoon
- Tamarind pulp – 2 and a 1/2 teaspoon
- Frying oil – 2 teaspoon
- Water – as per the consistency of the gravy.
How to make Royal Eggplant:
- Wash the brinjals and cut them into four parts but don’t cut the top.
- Now take two teaspoon of oil in the pan
- Add brinjal into it and fry them till they become golden brown and tender.
- Take out the brinjals separately on a tissue paper to soak the extra oil.
- In remaining oil put 2 teaspoon of fennel(saunf) seeds.
- After seeds splatter add onions into it.
- Now add 1 teaspoon of coriander powder
- 1/2 teaspoon of turmeric powder.
- 1/2 teaspoon of dry ginger powder.
- 1 teaspoon of red chilli powder.
- Salt as per taste.
- Now add tomato puree made by grated tomatoes.
- Cook till the oil separates and add little water to the gravy.
- Cook a bit and add fried brinjals and mix it with light hand.
- Finally add tamarind pulp.
- Cook it till the gravy thickens.
- Shahi baingan is ready to serve.
