Sambhar receipe

Sambhar receipe have four parts: Boiled Dal mixture, Vegetable mixture, Sambhar Masala and South Indian tadka

Sambhar Ingredients:

  • Toor dal – A small bowl
  • Tomato – 2
  • Onion – 1
  • Garlic – 3 cloves
  • Green chilli – 5 to 6
  • Turmeric powder – 1/2 teaspoon
  • Red chilli powder – 1 teaspoon

Tamarind water – half cup (soak the tamarind in water for 30 min)
Method:

1. Take toor dal in a cooker and add some water to it.

2. Now add chopped onion tomatoes, green chilli and garlic to dal.

3. Add turmeric powder and red chilli powder. Close the lid of the presuure cooker and put it on gas for 5 to 6 whistles.

4. When dal is boiled churn it with the help of a churner.

5. Add tamarind water to the mixture.

Vegetable Mixture Ingredients:

  • Drum sticks – 2
  • Raw mango – 1
  • Bottle gourd ( ghiya) – 1/2
  • Carrot – 1
  • Garlic – 2 cloves
  • Red chilli powder – 1/2 teaspoon
  • Turmeric powder – 1/3 teaspoon
  • Salt – as per taste

How to make Vegetable Mixture

1. In another cooker or pan take two drum sticks

 

 

2. Now add chopped bottle gourd, dry mango and carrot to it.

3. Add some water to it.

4. Put turmeric powder, red chilli powder and salt. Put it on gas for two whistles.

Sambhar Masala:

For sambhar masala we will be using one teaspoon of the masala. But below is the process of how to make it at home and store it for future cooking

  • Coriander seeds (dhaniya) – 1/2 bowl
  • Cumin seeds (jeera) – 1/3 bowl
  • Mustard seeds – 1/3 bowl
  • Methi seeds – 1/3 bowl

How to make Sambhar Masala

1. Add coriander seeds in one pan or kadhai.

2. Now add jeera, mustard seeds and methi seeds and roast them.

3. Take out the roasted seeds in a bowl.After it cools down grind it and keep it in air tight container.


South Indian Tadka:

  • Cumin seeds – 1/3 teaspoon
  • Mustard seeds – 1/3 teaspoon
  • Curry leaves – 6 to 7 leaves
  • Garlic – 2 cloves (crushed)
  • Oil – 1 tablespoon
  • Onion – one finely chopped
  • Hing ( Asofetida powder) – 1/4 teaspoon

How to make South Indian Tadka

1. Take oil in a pan

2. Add cumin seeds, mustard seeds, crushed garlic and curry leaves.

3. Now add onion and cook it till light brown.

4. Add hing and cook it for a bit.

Put dal mixture, boiled vegetable mixture and add 1 glass of water. Mix well and boil on high flame for 5 to 7 minutes.

Now add  coriander leaves.

Once sambhar start boiling add 1 teaspoon of prepared sambhar masala.
Add tadka to the sambhar and switch of the flame.
Serve it with Idli, dosa or rice as per your taste and choice.
